I made this tonight using riced cauliflower and it was really good. Took left over chicken thighs and cut them up. Combined with riced cauliflower, two eggs, cheddar cheese, garlic, sea salt, spinach, peas and some parmesan. Baked for 30 minutes. Simple and delicious. Will be making this again.
