This cold weather calls for soup and/or chili. My favorite soups are chicken taco and beef vegetable.
For the beef vegetable I saute' onions and celery, then brown the beef, add chicken broth and water sometimes I add cubed potatoes other times I add different pastas and many spices...salt, pepper, seasoned salt, greek seasoning, small amount chili powder, basil and parsley some chopped can green chili peppers .... add frozen cut okra when okra and potatoes are done add a can of diced tomatoes and cook just long enough to heat back up....don't overcook tomatoes.
My chili is very simple....brown ground beef and/or course ground chili beef (around 1 1/2 or 2 lbs), add i pkg of Williams chili mix one small can of tomato sauce and one can of diced tomatoes sometime I add a rinsed and drained can of beans, either black beans or pintos...the Williams mix is the key.
For the chicken soup I use chicken, onions, green chili peppers, whole kernel corn, black beans..broken corn tortillas then just about the same spices and liquids as the beef soup.

Sounds yummy. I'm hoping I'll be able to attend an upcoming chili cook-off coming up in my area this month in support of a youth group.
