I do quite a bit of the cooking in our household, especially at dinnertime. I had made chicken cutlets a few days ago and had two to use up, so tonight I made a casserole that came out quite good. We've been incorporating riced cauliflower into our diet more and more (Trader Joe's has it frozen) and tonight I combined an entire package with some raw spinach leaves that I sauteed in olive oil, butter and a bit of white wine. To that I added a can of fire roasted tomatoes, two chopped chicken cutlets and the cauliflower. I layered it in a casserole dish with a nice grated cheese blend from Trader Joe's and baked it at 350 for about 20 minutes. OMG, it was so good and healthy to boot.

Yum! That sounds fantastic. I'll have to try that. I love cauliflower, especially raw, thrown right into my salads.

I've been using cauliflower more now.. MY favorite is making a cauliflower cream sauce.. or a béchamel that is versatile and virtually calorie free..
I boil cauliflower florets in chicken stock until it's very well done.. mushy in fact.
I take out the cauliflower and let it cool.. saving the liquid.
then I put the cauliflower in a blender.. I add minced garlic.. salt and season to taste and add the liquid until I get the consistency I want. You can use it anywhere you would use an alfredo sauce or a cream sauce.. Think of the calories and fat you save by using this... and trust me.. it's delicious, Heres how I've used it.
On Pizza for a white sauce Shrimp alfredo or chicken creamy mushroom soup I added a packet of aus jus gravy mix to make a Stroganoff!
